STEP 1: INTRODUCTION TO ANDEAN CULINARY WORLD
We will start our Cusco Cooking Class with the Chef and participant introductions.
Begin your culinary adventure by diving into the rich history of Andean Cuisine. Discover time-honored culinary traditions that have been preserved for centuries in the Peruvian Andes.
STEP 2: ALL HANDS IN THE POT!
Learn to prepare Pachamanca, a traditional Peruvian dish dedicated to Mother Earth, which is cooked in a clay pot.
This festive Andean meal can be customized with a vegetarian option featuring trout and prawns.
For the best flavor, the ingredients need to marinate for one hour. During this time, we will prepare the products, make the dressings, and let the meats.
STEP 3: TAMALES FESTIVAL
Master the art of making Peruvian tamales in various forms—sweet, savory, green, and yellow. These gluten-free, meatless tamales offer a unique taste of Andean cuisine.
STEP 4: ENJOY OUR PRIVATE MARKET AND OPTIMIZE YOUR TIME
Explore our Interpretive Center “El Mercado”, where we will dive into the world of Andean products such as potatoes, corn, peppers, and superfoods like quinoa, cañihua, and tarwi. This experience will provide a deep understanding of the diversity and richness of local ingredients.
STEP 5: CHICHA’S TASTING EXPERIENCE
Delight in a tasting of traditional Andean beverages, including chicha morada, chicha de quinua, chicha de jora, and frutillada. Each sip connects you to the rich history and culture of the Andes.
STEP 6: UCHUCUTA THE BASE OF THE PERUVIAN CUISINE
Prepare Uchucuta, a traditional Andean sauce, using ancestral techniques with a batan and grinding stone. Experience the traditional methods passed down through generations.
STEP 7: SAVOR THE ANDEAN FEAST
End your culinary experience with a tasting of the dishes you’ve prepared—Pachamanca, tamales, uchucuta, and an array of pepper creams. This final banquet is the perfect conclusion to your culinary immersion in Cusco.
